500 Grms Maida
4 Tblsp ghee
1 Tspn black sesame.
1 Tspn Jeera
8 Tblsp. Sugar
2 Tblspn chilli powder
Salt to taste
Seive Maida in a wide vessel. Pour hot ghee and mix using a spatula . Using your finger mix well and squeeze it in between your palm .
Add all the above mentioned ingredients and mix . Using water knead to a stiff Dough.
Roll it into very thin chapatis , if it is thick , they don't come out crispy . Use good amount of flour while rolling. So that after cutting shapes it does not stick to the bottom
Cut into diamond shapes and deep fry store in air tight container.
Kulkuls or kidiyo with sugar coating
Kulkuls/kidiyo
I like kidio with sugar coating, if you don't like it this way you can add sugar powder while kneading the dough. If you're adding sugar powder ,take care while adding coconut milk or water while kneading as the dough gets moist and sticky and later it is difficult to roll the kulkuls.
Apply oil to the mould for easy and prefer design.
Ingredients
Maida 1 kg
Coconut milk 1 coconut
Chiroti Rawa 1/2 cup
Salt
Hot oil 3Tblsp
Oil for frying
Sugar 1/2 kg water 1 cup
Method
Dry mix maida and chiroti Rawa. Pour hot oil mix well. Add coconut milk salt and knead it to a fine dough. Keep aside for 10 mins.
Make kulkuls using the moulds and deep fry.
Next day make sugar icing and pour on the kulkuls. Store in air tight containers.
For sugar icing
For 1 kg maida use 1/2 kg sugar and 1 cup water. Boil the mixture till it thickens to 1 string consistency. Pour on the kulkuls and mix it . Spread it on flat plate to avoid sticking.

Rice Ladoo
The rice Ladoo is never missed in the Kuswar platter. These are preferably made with unpolished brown rice . The rice is washed drained , dried powdered. The coconut and the nuts are cooked in jaggery syrup and the ladoo is made when the mix is steaming hot , the palm turns pink while making these ladoo because onece the batter gets dry , it gets difficult to shape ladoo.
